Vanilla pods are to be stored away from sunlight and heat. It’s always better to use them in few weeks from the day of purchase as they will dry out soon. If you have leftover pods, always put them an air tight plastic bag and keep them on the shelf. Never freeze your pods as it doesn’t help in any way. Generally, it’s the seeds inside the pods that are scrapped out to be used but the pod itself adds a lot of flavor to a dish. It’s best to use the whole pod for that extra flavor and richness.
